Wash and dry the curry leaves then crush them into a paste using a mortar and pestle
Crush the garlic pods and let them rest for 10 minutes.
Add the coconut oil to a double boiler. (You can make one by using a pot of boiling water and putting a bowl over it.)
Add the curry leaves paste to the oil and boil for about 10 minutes or until the oil turns dark green.
After the 10 minutes, add the crushed garlic and boil for a further 5-10 minutes or until the garlic pods turn brown.
Remove from heat and let it cool
Once cooled, filter it into a bottle.
