Iyengar Bakery Style Spicy Biscuit With A Healthy Twist | OATS & Whole Wheat Savory Masala Cookies

OATS & Whole Wheat Savoury Masala Cookies are my all time favourite. Have you been to Bangalore before? It has got so many amazing things and wonderful people. Have u heard of Bangalore Iyengar Bakeries or have ever been to one?

They are masters in making the spicier versions of baking classics. Like masala bread with vegetable topping, spicy rolls, spicy puffs i.e puff pastry with savory filling. I especially like their spicy biscuits.

Iyengar Bakery Style khara (spicy) Biscuit is one particular snack which I fill my suitcase with whenever I visit Bangalore. It has got a very crumbly bite with green chilies and a hint of sweetness, The experience is one to be enjoyed over and over again. You cannot stop at one!

My healthier version

I have baked these spicy biscuits many times at home, I’ve actually tried different variations as well. Over the years I have made it more healthier. I have tried it without adding any sugar too, that was tasty as well. The recipe I am haring with you is the Iyengar bakery style spicy biscuits with a healthy twist. I don’t use refined flour, This one is made with Oats and Whole Wheat.

Ingredients

  • Oats (Oatmeal) – 1/2 cup
  • Whole Wheat Flour – 1 cup
  • Butter – 1/4 cup cubed
  • Salt – 1 tsp
  • Sugar – 1/4 cup
  • Coriander Leaves – 2 sprig chopped
  • Curry leaves – 2 sprig chopped
  • Whole Black Pepper Corns – 1/2 teaspoon coarsely pounded
  • Green Chilli – 1 finely chopped
  • Milk – 2 tbsp

Preparation

We begin making the Iyengar Style Whole Wheat and Oats Khara Biscuit Recipe (Savory Cookie Recipe) by pre heating the oven to 180 degree Celsius for 10 minutes.

Mix all the ingredients for the iyengar biscuits into a bowl untill it binds. You should not get them to a regular cookie dough consistency, it needs to be a bit crumbly. You can also use a food processor to combine all the ingredient. I prefer using hand so that I know exactly how much milk is needed.

Shape the Iyengar Biscuits into round and flat shaped cookies and place them on a baking sheet/ tray. You can make pattern on top of the cookies with a fork. You can make stripes or holes in them.

Bake them in the oven for about 30 minutes untill you see a golden crust and it is crisp. Once done, take them out of the oven and allow the cookies to rest on a wire rack for at least 15 minutes until it cools down completely. The Iyengar biscuits will continue to cook and get crisp white it is resting on the wire rack and hence it’s important to do this process.

Once done, you can store these Oats & Whole Wheat Khara Biscuits in an air tight container. It will stay fresh for a few days.

You can indulge on your guilt free healthy tea time snack with your chai/coffee.

My Top Tip

When you mix the dough, don’t get them to a regular cookie dough consistency, it needs to be a bit crumbly. That’s the speciality of this Iyengar style khara (spicy) biscuits.

    HI Narmada, Im vegan and what could be the substitute for butter ? Can I use coconut oil instead ?

      Hi Ramya, In the tradition Iyengar spicy biscuit they use sugar only. But I have tried it with raw sugar and jaggery also. It tastes good too.
