Vegetable Oats Kichdi

Mornings are very busy times when you have to get ready to work and get your kids ready and make them eat their breakfast. It’s really hard to spend hours to cook breakfast. This oats kichdi is a complete meal on it’s own, so comforting and its very quick to make. Makes for a good, nutritious and healthy breakfast on a busy day.

Oats are generally considered boring health food. But I’ve got some interesting recipes and oats nutrition facts for you that will change the way you see them! Including oats in your everyday diet will accelerate your weight loss.

Full of antioxidants and fiber, incorporating oats into your diet will leave your digestive system happy and healthy. I have tweaked the traditional Kichdi recipe to be more healthier and kid friendly.

Here’s my super healthy version of Oats Kichdi.

Ingredients

  • 1/3 Cup Quick cooking Oats
  • 1/3 Cup Moong dal (split and skinned)
  • 1/2 tsp Cumin Seeds
  • 1/4 tsp Turmeric Powder
  • 1/4 Tbsp Red Chilli Powder
  • 1 Small Onion, finely chopped
  • 1 Medium Tomato, finely chopped
  • 45 Gram Green peas
  • 1 Small Carrot, chopped
  • 3/4 tsp Ginger, finely chopped
  • 1/2 tsp Green Chillies, chopped
  • To taste Salt
  • 1/2 Tbsp Extra Virgin Olive oil
  • 2.5 Cups Water
  • 1/2 Tbsp Coriander Leaves(fresh), chopped ( For Garnishing )

Method

  • Add the oil directly into a pressure cooker. Once the oil has heated, add the cumin seeds and let them crackle.
  • Add chopped onion and cook until translucent, then add ginger and green chillies. Cook this for a few more seconds.
  • Add turmeric powder and red chilli powder, followed by tomatoes. Let them cook until tender.
  • Add all the vegetables and rinsed moong dal along with oats. Sauté for a few seconds.
  • Pour in the water and adjust salt.
  • Pressure cook for 8 minutes.
  • Let the pressure settle down then open the lid.

Garnish it with chopped coriander leaves or green chillies.

Enjoy this delicious Oats Kichdi hot, accompanied with a dollop of yogurt. /
