I’m so passionate about all fermented foods, not only because of the incredible taste and texture we get from fermenting them, but also because of how beneficial it is to maintain a great gut biome, which is of utmost importance if you want to lose weight.
Fermented green tomatoes are simple to make, and a lot easier than making pickles with vinegar. Green tomatoes, with their bright acidity and crisp texture, make excellent pickles.
This fermented green tomato recipe is great for your gut, it improves your thyroid health and helps you balance hormones too. It’s loaded with healthy bacteria.
We must use green tomatoes with very firm flesh to prepare this recipe. Traditionally, they are made this way. I’ll post another recipe for fermented red tomatoes later. The aromatic herbs that we’re going to add to this recipe makes it taste extraordinary.
You need to wash the tomatoes, wipe them dry then cut them in half. I am using about 1/2 kilo of green tomatoes.
Cut them lengthwise without dividing the tomato into two pieces, and fill with plenty of rock salt. Rock salt contains a healthy dose of minerals.
Keep these tomatoes aside while preparing the herb filling. Place the tomatoes in a bowl and let them rest for 30 minutes to release juices. Don’t throw this juice away, we’re going to use it.
Add a bunch of fresh coriander leaves to a blender along with 1 green chilli, 10 garlic pods, 1/2 tsp of asafoetida, 1/2 tsp ground fenugreek and juice of 2 lemons. Blend this into a fine paste.
Jump to RecipeFill each tomato with 1 tbsp of this herb paste, close both halves and place it in a glass container.
Place some more coriander leaves in the container and pour in the juice that the tomatoes released during the rest. We are not going to add additional salt water at a later stage. Rest these tomatoes for 24 hours.
The next day, you will notice that the tomatoes have released more juice. Let stand for another 24 hours.
And on the third day, the tomatoes will have released as much juice as possible.
Mix 1 tsp of salt in a glass of water, and fill the jar up to the neck with this salted water.
Close the container and leave to ferment in a cool, dry and dark place for 10 more days.
Fermented Green Tomatoes
Ingredients
- 1/2 Kg Green Tomatoes
- 1 or 2 Green Chillies
- 10 Garlic Pods
- 1/2 tsp Asafoetida
- 1/2 tsp Ground Fenugreek
Instructions

You can start eating this after 10 days, it will last you for about 4 weeks. But if you refrigerate it after the fermentation process, it will last for upto 6 months.
These fermented green tomatoes are simply delicious. You can eat them as they are, or you can add them to your salads or even add it as sandwich fillings. You can use the herb mixture while you make your sauces or curries.
This recipe contains both probiotics and prebiotics to give you a healthy gut system. Without prebiotics, probiotics alone is not that helpful. Prebiotics fiber is the food that feeds the probiotic bacteria. So we need to have the right balance if you want to maintain a healthy weight. Do try this and let me know how you like it.
